Ingredients:
For the Dough: π
- 2 cups of "00" flour (fancy, huh?)
- 3 large eggs, chilling at room temperature
- 1/4 teaspoon of salt
For the Filling: π§ (Skip this step of you're using bagged tortellini) πΊ Mix all the filling ingredients in a bowl and set aside. For the tortellini folding extravaganza, head over to YouTube and let the fun continue!
- 8 ounces of fresh ricotta (the cheese MVP)
- 1 extra-large egg
- 1/2 cup each of freshly grated Parmesan and mozzarella
- 4 oz of cream cheese, room temp
- 2 tablespoons of fresh spinach, chopped
- 1/2 teaspoon of dried basil
- 1/8 teaspoon of black pepper
- Pinch of freshly grated nutmeg
- 1 beaten egg with 1 teaspoon of water (for the egg wash party)
For the Soup: π²
- 2 tablespoons of butter
- 1 large yellow onion, diced
- 1/2 teaspoon each of salt and pepper
- 4 cloves of garlic, minced
- 1 sprig of rosemary, living its best chopped life
- 1 teaspoon of Italian seasoning
- 1/2 teaspoon of red pepper chili flakes
- 1 (28 oz.) can of diced tomatoes (can sub crushed tomatoes)
- 2 cans (10 3/4 oz. each) of tomato soup
- 1 (15 oz.) can of tomato sauce
- 1/3 cup of sun-dried tomatoes,
- 2 tablespoons of tomato paste
- 2 cups of chicken broth (can sub vegetable broth)
- 2 cups of heavy cream
- 1 (20 oz.) bag of refrigerated cheese tortellini (or flex those homemade skills)
- 1/2 cup of freshly grated Parmesan
- 2 tablespoons of fresh basil
Instructions:
- Melt that butter in a large soup pot or dutch oven and let the onion, salt, pepper, rosemary, and garlic have a little sizzle party for ~5 minutes.
- Throw in Italian seasoning, red pepper chili flakes, diced tomatoes, tomato soup, tomato sauce, sun-dried tomatoes, tomato paste, broth, and heavy cream. Stir it like you mean it and let it gently boil.
- Toss in the cheese tortellini and let them dance for ~5 minutes until they're cooked through.
- Sprinkle in Parmesan cheese, stir, taste. Adjust seasonings like a culinary wizard.
